Wheat for Kibe

Wheat for Kibe is one of the most consumed flours in Brazil and a key ingredient in the Brazilian food culture. It is the main ingredient in Kibe which is a dish inherited by the Syrian-Lebanese immigration into the country.

Recipe for Kibe:

250g of mince meat

250g of Authentic Brazilian Wheat for Kibe

1 onion chopped

1 bunch of mint chopped

5 garlic cloves chopped

Salt to taste

Aleppo pepper (or any other pepper)

3 tablespoons of butter

4 onions chopped in rings and fried in olive oil

How to prepare:

Soak the Authentic Brazilian Wheat for Kibe for two hours in water. Transfer it to a large bowl removing any excessive water by squeezing it with your hands. Add the mince meat, onion, mint, garlic, salt and pepper and again using your hands really work the ingredients together for about 5-7 minutes. Check the seasoning and adjust if necessary. Add the butter and work the dough for another 2 minutes. Press half of the mixture in a medium sized cake tin and add the fried onions evenly on top. Place the remaining mixture over the top then add some cubes of butter. Cover with aluminium foil and bake on medium heat for about 1 hour.
